Protein Brownies

I’ve got a huge sweet tooth, so I’m always looking for new macro-friendly desserts to make. I finally had some time last weekend to do some proper baking, and came up with these brownies as a result! They are high in protein, pretty low in calories, and have a sneaky serving of veg in them.. The secret ingredient is beetroot, but I promise you can’t taste it at all!


  • 250g ย cooked beetroot (about 2) – not the pickled kind!
  • 50g pitted dates – medjool are nicest, but any will work
  • 50g Butterscotch MySyrup (from MyProtein) or honey/other liquid sweetner
  • 75g whey protein
  • 1 egg
  • 1 egg white
  • 20g coconut oil, melted
  • 50g cocoa powder (or cacao powder, but use less)
  • 1/4 tsp cinnamon
  • 4 squirts toffee flavdrops (from MyProtein)
  • 1/2 tsp baking powder
  • 75g chocolate chips (optional)


  • Preheat the oven to 170C
  • Add the beetroot and dates to a food processor (or very strong blender) and pulse until smooth
  • Whisk the egg and egg white until mixed well
  • Add the egg mixture, protein powder, coconut oil, cocoa, baking powder, syrup, cinnamon, and flavdrops to the mixture in the food processor, and blend until smooth
  • Add the chocolate chips (if using) and mix by hand
  • Add the mixture to a baking tray/cake tin lined with greaseproof paper
  • Bake for 20 min at 170C, or until a knife comes out clean from the brownies
  • Allow the brownies to cool a little before cutting them up
  • Enjoy!

Makes 9 large brownies


  • For the whole batch – 98g Protein, 69g Carbs, 42g Fat, and 1,046 Kcal
  • Per brownie (1/9) – 11g Protein, 8g Carbs, 4.7g Fat and 118 Kcal

Serve warm with a sprinkle of cinnamon and a drizzle of choc shot
